Nothing like a fresh salad during these warm end of Summer days! This cucumber tomato salad is so simple and one of my favorites to break out. It’s perfect when I need a great side dish or a light snack. Even though it’s light and refreshing, I think it’s a staple to be enjoyed year round. Bonus, only a few ingredients. You mix them up, let them chill and enjoy!

Cucumber Tomato Salad

Ingredients:

2-3 cucumbers

2-3 tomatoes (wedged if using large tomatoes; halved if using grape)

1/4 cup of apple cider vinegar

1/4 cup of olive oil

1 tbsp of balsamic vinegar

Salt and fresh ground pepper to taste (I use Kosher salt).

In one bowl, add cucumbers and tomatoes. In another bowl add in liquids, whisk, season to taste. Pour ‘dressing’ over the cucumbers and tomatoes. Stir. Put in the fridge for at least 2 hours. Remove to check for seasoning (adjust as needed) and enjoy! It’s just that simple.

Don’t be afraid to switch things up either! Add in some onion or minced garlic and maybe some fresh parsley or dill. You could also add a little bit of sugar (which my dad does when he makes a similar version). Or try it with champagne vinegar instead of apple cider vinegar…oh, the possibilities!! Might as well keep the cucumber goodness going and pair this with my cucumber mint fizz or better yet, a simple glass of rosé.
