Weeknight Recipes: Raos Spaghetti with Zucchini Noodles

Seriously, is there a more popular weeknight meal than spaghetti? Hmm, maybe tacos (taco Tuesday anyone?) Anywho, my mister loves pasta and while I like it, it’s not one of my favs…plus it can be heavy. So, my (healthy) alternative was to make my classic spaghetti with zucchini noodles aka ‘zoodles’ instead. I have a spiralizer but honestly, I always pick it up already done from Whole Foods. Lazy? No. I call it efficient.

Raos Spaghetti with Zucchini Noodles

Ingredients:

  • Raos Arrabbiata Sauce – it is my ABSOLUTE FAV. It has so much flavor and a spicy kick (not too overpowering either, because I can only handle a little spice)
  • Ground Turkey – you certainly could opt for ground beef or no meat at all if you wanted.
  • Zucchini Noodles
  • Freshly minced garlic
  • Red Pepper Flakes
  • Kosher Salt
  • Ground Pepper
  • Lemons
  • Chopped Parsley or Basil for garnish (optional)

For ‘Zoodles’:

Add a tablespoon of olive oil to pan, add zucchini noodles and cook until warm. I usually cook for a couple min so as to not get soggy. That’s it!

For Sauce:

Sauté minced garlic in olive oil for a minute (be careful not to burn). Add ground turkey (note: always rince and pat dry your meat before cooking). Season with salt & pepper to taste and cook. Once cooked, add Raos sauce stir and cook until warm. Add red pepper flakes for extra heat (you could add chopped parsley/basil at this time or upon plating).

Add zoodles to pasta bowl and top with sauce. Squeeze lemon juice on top and serve. So fresh tasting and perfectly filling…who needs pasta?! I will say if you want a pasta taste but with protein and not carbs – try the Explore Cuisine gluten free, bean based pastas!
