Sad to say, but Summer is coming to a close (on Friday to be exact). Thought I’d share this delicious ‘end of Summer’ cocktail that you can sip now and into the fall. The best thing about this cocktail is that is light and fresh bu, can honestly be the perfect year round cocktail. You may recall, that my signature champagne cocktail is the super simple, glass of champagne with a splash of St. Germain (an elderflower liqueur) and this cocktail is my signature with a fresh twist!
Cucumber Mint Champagne Cocktail
- Champagne/Sparkling Wine – for this I chose Chandon, but a great option that is economical and perfect for mixed cocktails is Segura Viudas
- St. Germain
- Cucumber – thinly sliced
In a glass (I prefer not to serve in a champagne glass because of the cucumber/mint so instead choose an old fashioned/stemless wine glass), add ice and champagne – 3/4 of the way full. Add a small bunch of mint and sliced cucumber, then top off with St. Germain (approx. 1.5-2oz). stir and enjoy!
For those in the DC area, you’d still think it was Summer the way weather has been and continues to be – this would be such a refreshing drink!
