Grilled Bread with Prosciutto and Mozzarella

One of the quickest appetizers around – plus its delish! I’m a huge fan of prosciutto, whenever we order a cheese and charcuterie plate dining out, I ALWAYS request prosciutto as one of our meats or the closest thing to it. I don’t eat much bread but since I was making a light pasta dish, I thought, why not?

I came across this Ina recipe and switched the Tuscan bread for French bread…why? because that’s what I could find – use what you have!

What You Need:
– French Bread
– Shredded Mozzarella
– Prosciutto (thinly sliced)
– Parsley (for garnish)
– Olive Oil
– Garlic Clove

1. Slice bread and place on outdoor grill or grill pan (I used a grill pan) to let golden – 2-3min depending on heat of pan/grill.
2. Remove bread and rub each with garlic clove on grilled side (rub based on garlic taste preference), then drizzle some olive oil over.
3. Place slice of prosciutto on grilled side, topping with mozzarella and half of chopped parsley. Then place back on grill/grill pan. Cook for 1-2 minutes to allow for cheese to melt.
*note: I will use grill pan and then place in a 350 degree oven next time to melt more. If you were using a grill you would just cover.
4. Remove and top with more parsley for garnish – optional: to drizzle with a little more olive oil and sprinkle salt and pepper.

Enjoy Warm.
While we enjoyed this appetizer with a glass of rosé and cold pasta salad, it is a great appetizer for all seasons – give it a try! 🙂
