Champagne Margarita

Monday was apparently National Margarita Day so why not end the week with a fabulous twist on a classic! 
How about a margarita very appropriate for a champagne lover like me? I made it for me and my mister and his exact words were, “this is so refreshing, not too sugar/sweet like most are – nice job babe” – well, there you have it!
Here’s a delish recipe for a 
CHAMPAGNE MARGARITA
First off, prep your glasses – I typically don’t care for a salted rim because I prefer kosher salt and I think it tastes better than the norm used at restaurants/bars so I poured some kosher salt into a shallow bowl and grated some lime. Use a wedge of lime to rim the glass before dipping in the salt. The added zest to rim the glass was a nice touch…if I do say so myself…not just for taste but also for an added ‘zip’ of flavor.

Ingredients (serving for 2):

4 ounces of Tequila – I had Patron Silver on hand
3-4 ounces of lime juices – to your liking
1 1/4 teaspoons of Triple Sec (orange liqueur)
2 ounces of simple syrup (you can buy in the store – which I do – but you can easily make it at home; its just 1 cup water, 1 cup sugar that you warm in a small saucepan; whisking to dissolve, bring to a boil, remove, let cool and voila!)
Sparkling Wine/Champagne to top off
Ice (I prefer crushed but whatever works)

Pour the tequila, lime juice, triple sec and simple syrup in a cocktail shaker filled with ice. Shake well. Pour over into your already salt rimmed glasses that you filled with ice – leave room to top off with champagne (as shown). Pour in champagne to complete and seriously ENJOY!

I hope you like it as much as I did and found it as refreshing as Bj.
